life in Breadtop
i think it's time for me to write something abt my work at Breadtop. I work in the factory instead of shop... http://www.breadtop.com.au/
it's already the third week i'm working there, i start to get used to long working hours and wake up early. but seems my body is not really cope with it... my right hand always got paralysis.... chatted with Mum on phone, she said sometimes ppl repeat doing same thing would make this happened... what i can do it do more massage myself...
okay, back to my work. my company is an Australian-based bakery franchise selling a wide range of bread, cakes, buns and pastries. Currently the franchise has 25 stores throughout Sydney and Melbourne, with four stores in Brisbane with a new store opened in Adelaide at the end of March 2010. from http://en.wikipedia.org/wiki/Breadtop
my department basically doing chinese traditional bread like butterfly cookies, pineapple cakes, almond cookies, wife cakes, red bean cakes, sesame balls, lotus seed cakes, Phoenix Cookie, coconut cookies...... etc.
we normally have four people in our department. our master, senior Helen, senior Hin and me... the first few days, there's master Kit also... but at that time, Senior Hin was in sick leave... he got serious injury on his finger b4... had one month sick leave... these two senior was actually younger than me... but they are PR already. Master and Hin are from HK while Helen is from Guang Zhou... her cantonese is not very good but she doesn't prefer me to speak Mandarin... she thinks her cantonese is better than my mandarin wor........ but....... i don't know why i've got no any communication problem w/ Taiwanese, they even think my Mandarin is not bad..... mayb my Mandarin is Taiwan style??
for my work.... if doing Wife Cake or red bean cakes, my role is to apply egg wash, stamp them, add sesame on top, or some decoration....
for those cookies, u know actually they would prepare a long piece of cookies and i use machine to cut it into piece, distribute on the tray and ready to bake. i actually tried to help to make the long piece of butterfly cookies... and know that how to fold is so important, since the b4 and after bake are so different, it would be very ugly if fold it badly.
the most complicated thing is Phoenix Cookies i think.... we do a lot of preparations... and i still not see the whole process yet... will know it tmr?
today, i prepared the shallot........ it made me cry........ a few days b4, i needed to peel them which took a long time... and today i blended it ... i'm afraid someone would think i really cry....... lol.
for the pineapple cake, it actually semi-automatic... the machine would make balls with skin and filling inside, like a UFO shape, then we need to put them into the mould and press them...
since it's mass production, we need to do it very fast.... cookies, sesame ball as well.... we need to be very fast and don't let the machines faster than us...
and there would be some clean up work everyday as well, everytime we used the machines, we need to clean it... and i learn how to assemble them too.... sometimes i use an air blow gun to clean the dirt, it feels like a dentist... cleaning the teeth=p
since Senior Hin got injury b4.... it makes me take care myself all the time... esp. using the machine.... i will be careful, don't worry=)
